Easy Gluten Free Blackberry Muffins Recipe


  • 2 Cups Almond Flour
  • 1-2 Tbsp Coconut Flour (try 1 tbsp. first, you can always and another one if necessary)
  • 1/8 Tsp Sea Salt
  • 1/2 Tsp Baking Powder
  • 4 Eggs
  • 2-3 Tbsp Natvia (natural sweetener made with stevia & Erythritol)
  • 1 Tsp Apple Cider Vinegar
  • 1/4 Cup of Melted Coconut Oil
  • 2 Cups of Blackberries


  1. Preheat oven to 180°C
  2. In a medium bowl mix the almond flour, coconut flour, baking powder and sea salt
  3. In another bowl combine the eggs, natvia sugar, vinegar and coconut oil
  4. Mix the egg mixture to the almond flour mixture, stir until combined and add the blackberries.
  5. Scoop 1/4 cup size amounts into a silicone muffin tray
  6. Bake for 15 minutes or until slightly browned
