Homemade guacamole with cherry tomatoes

 

I always make my own guacamole because its much fresher than shop bought and I know exactly what’s gone into it.  I do understand some people just don’t have time or might be feeling lazy perhaps???

Recipe

1-2 Ripe Avocado’s

1-2 Spring Onions finely chopped

8 Cherry Tomatoes chopped up

1-2 Tbsp of Freshly squeezed lime juice (start with 1 Tbsp and adjust to taste)

Pinch of sea salt (again you can adjust to taste)

Pinch of Black Pepper

1/2 Tsp Coconut Sugar

Method

Cut the avocados in half, remove the stone.  Slice through the flesh lengthways and then across whilst the avocado halves are still in their skin.  Spoon out into a bowl and mash with a fork.

Chop the cherry toms and finely chop the spring onions.  Add to the avocado and mix together.

Add the lime juice, salt, pepper and coconut sugar.

Mix well and there you have your homemade guacamole – Easy!
