Paleo lemon and Coconut Muffins

(Makes 12 Muffins)

This recipe is so quick and easy to make.  The only sweetness comes from the plantains.  They are surprising in that they create a cake like consistency without the need for flour of any description…great if you cannot tolerate nut flours but still want to have you cake and eat it!
